Are these just about the cutest things you've ever seen?! They're cupcake pops (or you can make cupcake bites - sans stick) and I fell 100% in love with them on a site called Bakerella. They were born from a fun little treat called cake pops (round, coated cake-ball 'lollipops') that can be decorated in only about a million and one - or is it a million and two (?) different ways!
As I understand it - they're pretty simple to make. I'm gonna bake and cool a red velvet cake, crumble it into a bowl and mix it with about 2/3's of a can of ready-made cream cheese frosting. Then I'm gonna mold'em, dip'em.....and then you better believe I'm gonna eat'em! The 'dip'em' portion uses candy melts as opposed to chocolate (whether it be dark, milk or tinted white). I assume that even though chocolate can be melted velvety smooth, it may not be as melty/thin as the candy melts. Might not drip off as well. I have to admit, I've never used candy melts because I'da figured they'd taste....well...like doo-doo.....but we'll see! I'm totally excited to make these delightfully adorable pops! I'll check back in on Tuesday (three-day weekend ahead....oh yeah!) and let you know how they turned out!
